Pistachio Steaks

This is a nice twist on the traditional steak dinner, and makes a great change instead of the usual Sunday roast.

It would be yummy served with chunky homemade chips, or steamed vegetables and boiled potatoes.

Serves 4-6
Prep time: 5-7 mins
Cook time: 10 mins

Ingredients

  • 30g pistachio nuts, shelled
  • 100g rocket
  • 60g butter, softened
  • 600g sirloin steaks
  • 400g asparagus
  • 2 tbsp olive oil
  • Salt and black pepper

Instructions


  1. Combine the pistachios and rocket in a food processor and pulse until minced. Add the butter and pulse until combined.



  2. Rub the steaks and asparagus with the oil and season with salt and pepper.

  3. Heat a grill pan or barbecue to a high heat. Grill the steaks for two minutes per side for medium-rare. Transfer to a plate and cover with aluminium foil.



  4. Grill the asparagus for five minutes, turning to char on all sides.



  5. Serve the steaks with a dollop of the butter and the asparagus on the side.
