Leftover Christmas Cake – Baked Pear With Christmas Cake Crumble

This dessert is the the ultimate comfort food. A tasty and healthy(ish!) way to use up some of your Christmas cake, it is best served with a dollop of warm custard.

Serves: 4
Prep time: 10 minutes
Cooking time: 20-25 minutes

Ingredients

  • 100g leftover Christmas cake, crumbled
  • 100g oats
  • 30g butter, at room temperature
  • 2 pears, halved and cored
  • 2 tsp brown sugar

To serve:

  • Cream, custard or ice cream

Instructions

1. Preheat the oven to 180°C/160°C fan/gas mark 4.

2. In a bowl, combine the Christmas cake and oats. Use your fingers to work in the butter until evenly combined.

3. Fill each pear half with the Christmas cake crumble. Sprinkle each with brown sugar.

4. Place in a shallow baking dish and bake for 20-25 minutes until the pears are soft and the crumble is golden brown.
